We keep strict fast all week with the exceptions of regular fish on Palm Sunday with wine and oil; wine and oil on Holy Thursday following the Divine Liturgy. Holy Saturday is the strictest fast of the year, from Vespers of Holy Friday through the celebration of Pascha.
